The story of how my family came to be slightly addicted to waffles (at one point we declared a standing “Waffle Wednesday”) is rather long, and I won’t go into it (but it has to do with my great-grandmother’s 50,000 magazine subscriptions).

When my dad and I both decided to mostly eliminate gluten, waffles had to go. They were only gone temporarily, because I searched and came across the most perfect gluten-free recipe! Now we can enjoy waffles again without feeling ill afterwards. The berry sauce with its hint of maple syrup is delicious over the waffles, but you can serve them with straight up syrup if you prefer.

{ Berry Sauce }

2 cups frozen berries (you can do just strawberries, or mixed berries)
2 tablespoons maple syrup
2 teaspoons fresh lemon juice

Bring the berries, syrup, and lemon juice to low boil, stirring occasionally. Simmer the berries over medium-low heat while you make the waffles, allowing the juice to thicken slightly.

{ Waffles }

1 cup oat flour (gluten free, if necessary)
¾ cup old-fashioned oats (gluten free, if necessary)
½ cup almond meal
½ teaspoon baking powder
⅛ teaspoon salt
2 large eggs
½ cup + 2 tablespoons unsweetened almond milk
½ cup unsweetened applesauce
2 tablespoons honey
2 tablespoons coconut oil, melted and cooled slightly
1½ teaspoons vanilla extract

Whisk the oat flour, oats, almond meal, baking powder and salt in a large bowl.

In a separate bowl, combine the eggs, milk, applesauce, and honey. Whisk in the coconut oil and vanilla.

Stir the wet ingredients into the dry ingredients and set the batter aside for 8 minutes. Use this time to preheat your waffle iron (all are different, but I cook mine on 5).

Once the waffle batter has rested, begin cooking them. Keep the finished waffles in a warmed oven until all are cooked and ready to serve.
